CAJUN SQUASH 
1 med. onion, sliced
1 tbsp. olive oil
2 med. sized yellow squash, sliced
2 tomatoes, peeled and quartered
1/4 tsp. salt
1/8 tsp. dried whole oregano
1/8 tsp. dried whole thyme
1/4 tsp. hot sauce
1 clove garlic, minced
1 med. zucchini, sliced
1/8 tsp. pepper

Saute onion and garlic in oil in a large skillet until onion is crisp-tender. Add zucchini and yellow squash. Cook over medium-high heat, stirring constantly 5 minutes. Add remaining ingredients. Cook stirring constantly, 2 minutes. Yield 4 to 6 servings.
