MUSHROOM MACARONI SALAD | |
1 (6 or 8 oz.) can sliced mushrooms 2 tbsp. prepared mustard 2 tbsp. chopped parsley 2 tsp. lemon juice 2 c. cold, cooked macaroni 1 tsp. salt 3/4 c. mayonnaise 2 tbsp. minced onion 1 c. chopped celery 1 tsp. tarragon vinegar 1/2 tsp. black pepper Combine mayonnaise, mustard, onion, parsley, lemon juice, vinegar, salt and pepper. Mix thoroughly. Drain and slice mushrooms; add celery, macaroni and mushrooms to mixture. Cover and refrigerate 1 or 2 hours before serving to let flavors mingle. Makes 1 quart. |
