SQUASH CASSEROLE | |
6 med. yellow squash, others if you prefer, sliced 1/4 tsp. pepper 1/2 tsp. salt 1 egg, well beaten 1/2 c. milk 1/2 c. finely chopped onion 1 can cream of mushroom soup 1 c. grated cheese 1 c. crushed Ritz crackers Boil squash until tender, drain. Combine and mix all ingredients except a small amount of cheese and crackers. Pour into baking dish and cook for 30 minutes at 350 degrees. Top with remaining cheese and cracker mixture and cook until lightly browned. |
