PARSLEY POTATOES 
3 lbs. potatoes, peeled and cut into 2 inch pieces
2 tsp. salt
8 tbsp. butter
1 clove garlic, chopped
1/2 c. parsley, chopped
Salt and pepper

Place potatoes in cold water to cover with salt. Bring to a boil. Boil gently until potatoes are tender, about 15 minutes. Drain. Melt butter in a skillet. Add garlic and parsley. Salt and pepper. Bring to a boil. Add potatoes and toss in butter until hot.
