CHEESY BROWN RICE 
1/2 c. chopped onion
2 tbsp. butter
1 can cream of mushroom soup
2 c. cooked rice
2 c. grated Cheddar cheese
1 pkg. frozen chopped spinach, thawed or partially cooked
4 eggs, beaten
3 tbsp. Worcestershire sauce
1/8 tsp. thyme leaves
Salt & pepper to taste

Brown onion in butter. Add all ingredients and mix together. Pour into large casserole dish. Top with cheese. Bake at 350 degrees for 1 hour.
