ZUCCHINI BREAD 
3 c. plain flour
3 tsp. ground cinnamon
2 c. sugar
1 tsp. baking soda
1/4 tsp. baking powder
1 tsp. salt
3 eggs
1 c. Crisco oil
2 tsp. vanilla
2 c. grated zucchini
1 c. chopped pecans or raisins

Beat eggs, separate and stir all ingredients with a big spoon. Bake at 225 degrees for 1 hour in three greased loaf pans. Wrap in foil when cooled.
