SHRIMP SCAMPI 
3/4 lb. medium-size raw shrimp, shelled & deveined (approx.)
6 tbsp. butter
1 tbsp. olive oil or salad oil
2 tsp. lemon juice
2 tbsp. minced parsley
Dash of liquid hot pepper seasoning
1 tbsp. minced green onion
4-5 cloves garlic, minced
1/4 tsp. salt
1/4 tsp. grated lemon peel

Pat shrimp dry with paper towels, set aside. Melt butter in a wide frying pan over medium heat. Stir in green onion, oil, garlic, lemon juice and salt; cook until bubbly.

Add shrimp to pan and cook, stirring occasionally, until shrimp turns pink (4-5 minutes). Stir in parsley, lemon peel and hot pepper seasoning. Makes 2 servings.
