APPLE - CREAM CHEESE BARS 
2 1/2 c. flour
1 1/3 c. plus 2 tbsp. sugar
1 tsp. salt
1/3 c. butter
3 tbsp. oil
2 eggs
6 c. peeled and chopped apples
1 tbsp. lemon juice
40 caramels
1 c. evaporated milk
1 (8 oz.) pkg. cream cheese
1/2 c. chopped pecans

Combine 2 cups flour, 2 tablespoon sugar and salt in a bowl. Cut in butter until crumbly. Add oil, 1 egg, and 2 2/3 tablespoon cold water. Mix well. Press into 10 x 15 inch pan.

Combine apple, 1 cup sugar, 1/2 cup flour, and lemon juice. Spread over crust. Melt caramels in evaporated milk over low heat, stirring constantly. Pour over apple layer. Combine cream cheese, 1 egg, and 1/3 cup sugar. Beat until smooth. Spread over caramel layer. Top with pecans. Bake at 325 degrees for 55 minutes. Cool slightly. Cut into bars.
