CHEESE - TOPPED CAULIFLOWER 
1 sm. head cauliflower
2 tbsp. butter
2 tbsp. flour
1/2 tsp. salt
1/4 tsp. pepper
1/2 to 1 tsp. dry mustard
1 1/4 c. milk
1 1/4 c. grated cheese

Steam or simmer cauliflower until barely tender (12-14 minutes).

SAUCE: Melt butter and stir in flour. Cook and stir for 3-4 minutes. Blend in seasonings, milk, and 1 cup of cheese. Cook sauce until thickened and smooth. Pour this over cauliflower in casserole, then top with remaining cheese.

Broil under broiler for 5 minutes or until golden brown and bubbly. Makes approximately 6 servings.
