ORANGE - GLAZED BEETS 
4 med. beets or 1 (16 oz.) can sliced beets, drained
1 tbsp. brown sugar
1 tbsp. butter
1 tbsp. cornstarch
1/4 tsp. orange peel, finely shredded
1/4 c. orange juice

In a saucepan, cook fresh whole beets, covered in boiling water 40 to 50 minutes or until tender, drain. Cool slightly, slip off skin and slice. In a medium saucepan, melt butter. Stir in brown sugar and cornstarch. Stir in orange peel and juice. Cook and stir until thickened and bubbly. Add sliced beets. Cook and stir for 3 to 4 minutes or until heated through. Serves 4.
