ORANGE STUFFED SQUASH 
3 med. acorn squash
1/4 c. brown sugar (I use dark)
2 tbsp. butter
1 tsp. salt
1 tsp. orange peel
1/4 c. orange juice
1/4 c. chopped pecans (walnuts may be used)

Cut the squash in halves; remove seeds and strings. Place cut side down on baking sheet. Bake at 350 degrees for about 30 minutes. Scoop out the pulp, leaving a 1/4 inch shell. Combine pulp with sugar, butter, salt and orange peel. Add orange juice (more if mixture is too dry). Fold in chopped nuts. Fill shells with the mixture. Broil until lightly browned.
