DOT'S RED VELVET POUND CAKE 
3 c. sugar
1 1/2 c. Crisco
7 eggs
3 c. plain flour
1/2 tsp. baking powder
1/4 tsp. salt
1 c. buttermilk
2 tsp. vanilla flavoring
1 (1 oz.) bottle red cake coloring

Cream sugar and Crisco. Add eggs, one at a time. Mix flour, baking powder, salt. Add flour and milk alternately beginning and ending with flour. Add flavoring and cake coloring. Beat until well blended. Pour in well-greased and floured tube pan. Bake at 325 degrees for 1 1/2 hours. Frost when cool.

FROSTING:

1 (8 oz.) pkg. cream cheese
1/2 stick butter
1 tsp. vanilla
Maraschino cherries, chopped fine
1/2 to 1 c. chopped pecans
1 box powdered sugar

Cream butter and cream cheese. Add powdered sugar, cherries, vanilla, and pecans. Beat until smooth. Spread on cake.
