PORK POT ROAST | |
4 lb. fresh shoulder 1 1/2 tsp. salt 1 1/2 c. water 9 med. apples 1/2 c. seedless raisins 4 tbsp. flour Brown meat on all sides in heavy skillet. Add salt and 1 cup water. Cover and cook slowly for 2 1/2 hours. Wash, peel and quarter apples. Add apples and raisins to meat. Continue to cook for 30 minutes. Remove meat, apples and raisins to hot serving plate, measure liquid. Add enough water to make 2 cups liquid. Make a thickening of flour and remaining 1/2 cup water. Add to liquid and cook until slightly thickened, about 5 minutes, stirring constantly. |
