POTATO CAKES 
2 c. leftover mashed potatoes
1 slightly beaten egg
1/4 c. chopped onion
Salt and pepper to taste

To potatoes; add egg, onion, salt, and pepper. Mix well. Shape into patties. Roll in flour. Brown slowly in hot fat about 5 minutes on each side. Serve hot.
