POTATO CAKES 
2 c. leftover mashed potatoes
1 egg, slightly beaten
1 tbsp. finely chopped onion
1 tbsp. chopped green pepper (opt.)
2 or 3 tbsp. fat or oil

Combine all ingredients except fat or oil. Shape into patties and fry until golden brown. One half cup flour may be added to make them stick together better.
