POTATO CAKES 
2 c. (leftover) mashed potatoes
2 eggs
1 sm. onion (optional)
1 sm. pepper (optional)
3 slices (shredded) American cheese
3/4 c. flour
Pepper and salt (to taste)

Add all ingredients to potatoes, stir until well blended.

In large skillet add 4 tablespoons oil. Spoon potato mixture into hot oil. Cook until golden brown. Makes about 6 or 8 potato cakes.
