POTATO CAKES 
2 1/2 c. coarsely shredded raw potato
1 sm. onion
1/3 c. flour
1 egg
1 tsp. salt

Soak shredded potato. Mix all ingredients well. Pour 1/4 cup into hot skillet. Cook until browned crisp, about 5 minutes. 10 cakes, 5 servings.
