JUICE MOUSSE | |
Apple or other fruit juice Pinch of sea salt Agar-Agar Sesame tahini or almond butter (optional) Check the agar package to determine the proportions of liquid needed for the amount you wish to make. Bring juice, salt and agar to a boil. Reduce flame to simmer and heat until agar dissolves. Pour into a flat pan and allow to cool and become firm. Refrigeration isn't necessary but can hasten the process. When solid, remove from pan and blend with tahini or almond butter in blender. It should have a pudding sort of consistency. Serve with a slice of fruit for a garnish. |
