CHICKEN CACCIATORE 
1 sm. onion, chopped
1/4 c. water
1 c. canned tomatoes
1/2 c. tomato puree or sauce
1/2 tsp. garlic powder
1 tsp. oregano
1/8 tsp. pepper
Salt to taste
4 chicken breasts, boneless (cut in sm. pieces)

Boil onion in water until tender in a covered saucepan. Do not drain. Add tomatoes, tomato puree or sauce, garlic powder, oregano and pepper to onions. Simmer 10 minutes to blend flavors.

Place chicken in frying pan. Pour tomato mixture over chicken. Cook covered over low heat until chicken is tender, about 45 minutes. Uncover and cook 15 minutes more to thicken tomato sauce. Serve over rice or noodles.
