MANDARIN SALAD 
1/2 head lettuce, shredded
1 c. celery, chopped
1 tbsp. (or more) fresh minced parsley
2 green onions & tops, chopped
1 can mandarin oranges, drained (winter, I use fresh orange slices)
1/2 c. caramelized almonds, sliced
2 tbsp. sugar

Caramelize almonds by adding sugar and stirring over low heat until sugar melts and collects over almonds. Use a small, heavy frying pan to do almonds. Combine all ingredients and use following dressing.

DRESSING:

1/2 tsp. salt
Dash pepper
2 tbsp. sugar
2 tbsp. vinegar
1/4 c. salad oil

Shake together and pour over grapes. Serves 4.
