BRAWN, SCOTTISH STYLE 
1 lb. ground beef
1 c. bread crumbs
Pepper
1 tbsp. A-1 sauce
1 lb. ground ham
1 egg
Marjoram

The end of a ham, or trimmings will do fine and usually provide about 1 pound to grind. With hands, mix beef, ham, crumbs, egg and seasonings until merged. Pack into a bowl, cover tightly with foil and steam for 1 1/2 hours. Excellent cold with salad.
