OATMEAL COOKIES | |
2 c. sugar 2 c. shortening 4 eggs 4 c. oatmeal 12 tbsp. raisin juice 2 tsp. baking soda dissolved in raisin juice 2 c. raisins (covered with water and heat to boiling - cool) 4 c. flour 2 tsp. baking powder 1 tsp. salt 1 tsp. vanilla Cook raisins until soft. Cool. Cream shortening and sugar together, add eggs. Beat well. Add oatmeal and raisins juice in which soda has been dissolved. Add raisins, flour and baking powder. Nuts may be added (2 cups). Bake in 350 to 375 degree oven until lightly browned 10 to 12 minutes. Makes 6 dozen. I got this recipe from an Indian lady that made them for the small town cafe in Nebraska where I grew up. |
