VIDALIA CHICKEN BREAST CASSEROLE 
1 lg. chicken breast, split and deboned
2 med. potatoes, peeled and sliced
1 can cream of chicken soup
1 med. can mushrooms
Vidalia onions sliced to cover potatoes fully

Brown chicken in 2 tablespoons oil. Layer potatoes in bottom of 1 1/2-quart casserole. Place onions and mushrooms over potatoes. Cover with soup. Place chicken breast on top. Sprinkle with paprika. Bake at 350 degrees for 1 hour. Keep tightly covered.
