SPINACH LEAVES WITH NUTMEG | |
1 1/2 lbs. fresh spinach 2 tbsp. butter 1/8 tsp. grated nutmeg Salt & freshly ground pepper to taste Discard any tough stems and blemished spinach leaves. Rinse well and drain the spinach. Heat the butter in a nonstick skillet and add the spinach, nutmeg, salt and pepper. Cook, tossing and stirring, until wilted, about 4 minutes. Do not overcook. Yield: 4 servings. |
