SPAETZLE 
2 c. flour
1 tsp. salt
2 slightly beaten eggs
1 c. milk
Melted butter
Finely chopped parsley

Mix flour and 1 teaspoon salt. Add eggs and milk, and beat well. Let sit for 5 minutes.

Bring water to a boil in a large pot. Add remaining salt. Place batter in a coarse-sieved colander or Spaetzle press. With the back of a large spoon, press batter through the colander into the boiling water. Cook for 5 minutes stirring frequently.

Drain, then sprinkle with a little melted butter and finely chopped parsley. Serves 4 to 6.
