SPANISH PLANTAIN & GARLIC SAUCE | |
3 lg. very yellow or green plantains (resembling bananas) 6 garlic whole cloves 1/4 c. salad oil 3 tbsp. vinegar 1/4 tsp. salt 1/4 c. oil for frying GARLIC SAUCE: In a wooden bowl (should have a garlic masher) add 6 whole garlic cloves, mash with garlic masher until well minced, add 1/4 cup oil, add 3 tablespoons vinegar and 1/4 teaspoon salt; stir. Slice yellow plantains about 1/4" thick. (Slice green plantains about 1/4" thick.) Brown plantain in 1/4 cup oil turning once. Remove from pan. Set on paper towels to drain, then set on platter. Serve on side dish, spoon on garlic salt. Green plantains: Brown plantains in oil then place on work board, use mallet or garlic masher and lightly mash plantains. Serve as above. |
