CHINESE PEANUT CHICKEN 
1 red pepper, cut up
1 green onion, cut in 1" pieces
1 whole chicken breasts, cut in 1" cubes
2 pieces ginger, crushed
1 clove garlic, crushed
1/2 c. mushrooms
1/2 c. grapes
1 c. oil, for frying
1 tbsp. oyster sauce
1 tbsp. soy sauce
1 tbsp. flour
1 tsp. sugar
1/2 tsp. salt
2 tbsp. cooking wine
1/2 c. peanuts

Marinate chicken in salt and cooking wine for about 10 minutes. While it is marinating, make a thickening sauce with soy sauce, oyster sauce, sugar and 2 tablespoons water, set aside. Dust chicken with cornstarch and fry in deep oil. When done, remove from oil and set aside. Using only 2 tablespoons of leftover cooking oil, stir fry ginger and garlic a few seconds, then add red pepper and green onion and stir fry for about 2 minutes. Add mushrooms, grapes and chicken. Toss around a few minutes, then add thickening sauce and bring to a boil. Toss in peanuts and 2 tablespoons Chinese cooking wine and serve.
