DANISH POTATO SALAD 
1/4 c. vinegar
1/4 c. water
1/4 c. sugar
1/4 tsp. salt
Dash of pepper
1 tsp. prepared mustard
2 eggs, well beaten
1 c. salad dressing
4 c. cubed, cooked potatoes (2 lb.)
2 hard cooked eggs, chopped
1/2 c. chopped cucumbers or celery
1 tbsp. minced onion
1 tbsp. chopped green peppers

Combine first 6 ingredients. Bring to a boil. Reduce heat; gradually beat in well beaten eggs. Cook, stirring constantly, until slightly thickened, about 5 minutes.

Beat in salad dressing; toss together remaining ingredients. Pour on dressing; toss gently. Adjust seasoning if its necessary. Makes 6 servings.
