1 (14 oz.) bag flaked coconut 1 (14 oz.) can sweetened condensed milk 1/2 cup (1 stick) melted butter 3 cups confectioners' sugar 2 (12 oz. ea.) bags semi-sweet chocolate chips In a large bowl, combine flaked coconut and sweetened condensed milk. Melt butter and add it to the coconut and sweetened condensed milk. Then add confectioners' sugar. Stir until combined. Refrigerate the mixture for about 1 hour. After mixture is chilled, roll tablespoon-sized balls of the mixture. Use a double boiler to melt both bags of chocolate chips (keep double boiler going while you drop each coconut ball into the chocolate). When the chocolate is thoroughly melted, drop each coconut ball into the chocolate (one at a time), and coat the outside. Use two spoons to make this easier. Place each chocolate dipped coconut ball onto a cookie sheet covered with wax paper. Let the chocolate set before eating (approximately 2-3 hours). Submitted by: Am.So. |
