ORANGE/ALMOND SALAD 
1 head Romaine lettuce
1 can mandarin oranges
1 sm. pkg. sliced almonds
1 tbsp. sugar
1 tbsp. water
3 scallions
1/4 c. Ken's Italian dressing

Rinse lettuce and break into small pieces, put in salad bowl. Add drained oranges. Cut scallions and put in bowl.

Heat 1 tablespoon sugar and 1 tablespoon water in saucepan for 2 minutes. Toss nuts to coat and caramelize. Cool. Toss salad with dressing and sprinkle nuts on top.
