CARROT RING PUDDING 
1/2 c. brown sugar
3/4 c. butter
1 egg
1 1/4 c. sifted flour
1/2 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1 tsp. lemon juice
1 c. mashed carrots, cooked and cooled

Cream sugar and butter. Add egg and beat. Add dry ingredients. Mix and add lemon juice and carrot. Mix well. Bake in greased ring mold. Serves 6 to 8. You can fill center with green cooked vegetables or mushrooms. Bake at 350 degrees for 45 minutes.
