OREGON SALMON ROYALE 
Salmon prepared for baking
Fresh leaves of sweet fennel, or fennel seeds - 1 to 2 tsp.
2 or more c. tomatoes (according to size of salmon)
Sliced onion
Several fennel leaves

If using leaves of fennel put some inside of fish. Put vegetables in bottom of roasting pan; salmon on top. Bake 20 minutes for each one inch thickness of fish. Season with salt and pepper. Baste with the sauce.

To serve: strain some of the sauce on the platter, some over the fish and some in a serving dish.
