EASY LEMON VELVET CAKE 
2/3 c. shortening
1 c. sugar
1 tsp lemon extract
2 eggs
2 c. self rising flour
3 c. milk

Mix well with mixer. Bake in a 325°F oven till done (about 50 minutes).

Icing:

2 1/2 tbsp flour
1/2 cup milk
1/2 c. shortening
1/2 c. sugar
2 tsp vanilla or lemon flavoring
dash of salt
3 c. powder sugar
1 tbsp milk if needed

Beat with mixer. Pour over cake. Allow cake to cool before serving.
