PASTA WITH UNCOOKED TOMATO,
BASIL & MOZZARELLA SAUCE
 
1 1/2 lbs. tomatoes (3 or 4), seeded & chopped
3 cloves garlic, minced
1/2 c. packed fresh basil leaves, coarsely chopped
1 c. diced Mozzarella cheese
1/2 c. olive oil
2 tbsp. red wine vinegar
Salt & a few hot dried pepper flakes, to taste
1 lb. spaghetti

In a large bowl, combine well the tomatoes, garlic, basil, oil, Mozzarella cheese, vinegar, salt and pepper flakes. Let sauce stand, covered, at room temperature for at least 1 hour and up to 4 hours. Cook spaghetti, drain and add it to the sauce. Toss and serve immediately. Serves 4.
