CANDIED YAMS 
2 c. sugar
1 level tsp. cinnamon
1 tsp. nutmeg
1 stick butter
2 lg. cans sweet potatoes
1 level tsp. pumpkin pie spice
1/2 c. water from yams

Mix sugar and spices together. Add water. Cook to thick syrup or until almost a hard ball when dropped in cold water. Add butter and stir to melt. Put potatoes in baking dish then pour hot syrup over potatoes. Put in oven (350 degrees) for about 5 to 10 minutes. If fresh potatoes are used, boil about 6 to 8 potatoes and cut them up.
