HONEY MUFFINS 
1/2 c. flour
1/2 tsp. salt
2 tsp. baking powder
1/2 c. whole wheat flour
1 egg, beaten
1/4 c. orange juice
1 tsp. grated orange rind
1/2 c. honey
3 tbsp. melted shortening

Sift flour once, measure, add salt and baking powder and sift again. Add whole wheat flour and mix thoroughly. Combine eggs, orange juice and rind, honey and shortening. Add all at once to flour. Stir only enough to dampen all flour. Bake in well greased muffin pans in hot oven 15 to 20 minutes or until browned.
