MAMA'S HOMEMADE "CHICKEN POT PIE" | |
6-8 boneless skinless chicken thighs (pre-cooked before) 2 (9-inch) deep pie shells (or make your own, see below) VEGETABLES: 3/4 (1 lb.) bag baby carrots. cut in half 2-3 potatoes, peeled 1 (15 oz.) can green beans or peas, drained add veggies you like... corn, broccoli, etc! GRAVY: 2-3 (15 oz. ea.) cans chicken broth (Swanson) 1/4 cup all-purpose flour (for each can of broth) SEASONINGS: garlic salt (for chicken) salt and pepper, to taste Cook chicken thighs in oven, sprinkle with garlic salt over top and cover with foil, with glass pan for 2 hours at 350°F. Will be very tender and will fall apart. TIP: Or in a Crock-Pot while you at work all day, LOW to MED. Can add to oven if not done when you get home to speed things up! Or use chicken you had left from night before. Cuts prep time ALOT! I make a big Costco family pack boneless skinless and cook for dinner night before, then use rest for something else for the next 2 nights of dinner (this is my something else ;-). When you have family you like to cut corners when you can! TIP: Take your potatoes and pre-microwave them to cook them a little faster. When done, peel and dice them or size you prefer. When chicken is cooked, put in large skillet, add chicken and juices from chicken to skillet. In a 2 cup size measuring cup, ADD broth and 1/4 cup flour and mix til' chunks are gone, then stir into chicken in pan. Do 2 cans like this for sure. Add carrots to simmer in juices to soften carrots. Once carrots are soft add green beans and vegetables of choice. Stir and mix. TIP: If you want more gravy add other can or you can makes it in same pan after and set aside to pour over each piece, when pie is done. That's it... add to pie shells. Makes 2 (9-inch) pies or one BIG pie. Bake at 350°F for 30 minutes or til' crust is golden brown! PIE SHELLS: 2 cups all-purpose flour 2/3 cup butter 1 tsp. sea salt 5-7 tbsp. cold water Add ingredients, mix, then cut into two pieces (if you need it) for top and bottom crust. Flour cutting board, lightly flour top of ball and roll it out. TIP: I buy a two pack of shells then make my own tops so it looks more homemade! Easy, easy, easy. Enjoy!
