SHOE PEG CORN SALAD 
1 can shoepeg corn (sm. white grains)
1 can sm. green peas
1 can French style green beans
1 green pepper, chopped
1 bunch sm. green onions, also tops
4 oz. pimento

1/2 c. vinegar
1/2 c. sugar (or less)
1/4 c. oil

Drain vegetables. Mix corn, peas, beans, pepper, onions, and pimento. Bring to boil vinegar, oil and sugar. Pour over mixture of vegetables. Marinate overnight. Keeps well in refrigerator.
