SHRIMP SCAMPI 
1 1/2 lb. jumbo shrimp
1/3 tbsp. butter
1 tbsp. olive oil
2 garlic cloves, crushed
Salt & pepper
Juice of 1/4 lemon (save skin & put in with other ingredients)
1 tbsp. parsley, chopped

Simmer all the above ingredients, except shrimp for 15 minutes. Place the shrimp in a shallow baking dish and just before putting over the shrimp, add 2 tablespoons of dry white wine to the simmered ingredients. If you don't have wine, use vinegar. Broil at 400 degrees for 15 minutes in mixture; baste. Have pan 10 inches or less below flame.
