FRESH APPLE CAKE 
1 1/2 c. salad oil
2 c. sugar
2 large eggs
1 tsp. baking soda
2 tsp. baking powder
2 tsp. vanilla
1 tbsp. cinnamon
1 tsp. salt
2 1/2 c. flour, sifted
1 c. chopped pecans
3 c. raw chopped apples

In a large bowl, combine oil, sugar, eggs and vanilla. Beat until creamy on low speed of mixer. Mix flour with soda, baking powder, cinnamon and salt. Then add flour mixture to oil mixture. Then fold in apples and pecans.

Bake at 350°F for 55 to 60 minutes.
