1 1/2 c. oil
2 c. sugar
2 eggs
2 tsp. vanilla
2 c. flour
1 tsp. cinnamon
2 tsp. baking soda
1 tsp. salt
3/4 c. chopped nuts
3 c. diced apples

Beat together oil, sugar, eggs and vanilla. Sift together flour, cinnamon, soda and salt. Add to sugar mixture. Add chopped nuts and diced apples. Sprinkle with sugar and cinnamon before baking. Bake in 350 degree oven for a 9x13 inch pan for 1 hour.
