CHICKEN CORDON BLEU 
6 chicken half breasts, boned and skinned
6 thin slices ham
3 slices Mozzarella cheese
1 med. tomato, chopped
1/2 tsp. sage
1/2 c. dry bread crumbs
2 tbsp. grated Parmesan cheese
2 tbsp. parsley
4 tbsp. butter, melted

Place chicken on cutting board. Pound to 5x5 inches. Place ham slice and half of cheese on each cutlet. Top with same tomato and a dash of sage. Tuck in sides; roll up jelly roll style.

Combine bread crumbs, Parmesan and parsley. Dip chicken in butter, then roll in crumbs. Place in shallow pan. Bake in 350 degree oven for 40-45 minutes.
