CHARCOAL BROILED CHICKEN | |
2 (2 to 3 lb.) broiler-fryers (halved) 1/2 c. soy sauce 1/4 c. water 1/2 c. vegetable oil 2 tbsp. instant minced onion 2 tbsp. sesame seed 1 tbsp. sugar 1 tsp. ground ginger 3/4 tsp. salt 1/2 tsp. instant minced garlic 1/8 tsp. ground red pepper Place chicken in a plastic bag. Combine remaining ingredients; mix well. Pour marinade into bag; fasten bag securely, and place in shallow pan in refrigerator at least 12 hours, turning occasionally. Remove chicken from marinade. Arrange, bone side down, on grill over low coals. Grill 1 hour or until meat is tender and skin is crisp, turning and basting with marinade every 15 minutes. Yield: 4 servings. |
