OREGON-SPANISH RICE 
2 lg. chopped onions
1 lg. diced green bell pepper
1 tbsp. peanut or olive oil
1 1/2 lb. hamburger
Salt to taste (try Spike or VegSal)
Pepper
1 (6 oz.) can tomato paste
1 can water
1 (15 oz.) can stewed tomatoes

RICE MIXTURE:

2 stalks diced celery
4 c. cooked rice
1 tsp. curry
1 c. sliced mushrooms

In oil at medium high heat, simmer onions, bell peppers and celery (form rice mix) in electric skillet until onion starts turning transparent. Add hamburger, crumbling as it is stirred. Season and simmer until hamburger browns, drain. Stir in tomato paste, water, stewed tomatoes and rest of rice mixture and simmer for 5 more minutes. Stir well. Serves 5-8.
