BLACK-EYED PEA SUPPER | |
1 (No. 300) can black-eyed peas 1/2 lb. ground sausage 1/2 chopped green pepper 1/4 c. chopped onion 1 garlic clove, chopped or minced 1 (14 oz.) can tomatoes 1/4 tsp. pepper 1/4 tsp. oregano 1/4 tsp. rosemary 1 c. grated cheese Brown sausage. Drain. In large skillet, combine sausage, green pepper, onion and garlic. Cook 5 minutes. Add tomatoes and seasonings. Pour in black-eyed peas including liquid. Cover and simmer slowly for 20 minutes. Serve with grated cheese on top. |
