OATMEAL MUFFINS 
1 1/2 c. pancake mix
1 c. uncooked Quaker Oats
1/2 c. packed brown sugar
1 1/2 tsp. cinnamon
1 c. milk
1 egg (or 2 egg whites)
1/4 c. vegetable oil
1/2 c. peeled, chopped apple
1/3 c. raisins

Preheat oven to 425 degrees. Grease bottoms of 12 medium muffin cups or line with paper baking cups. Combine pancake mix, oats, brown sugar and cinnamon. Add remaining ingredients; mix just until dry ingredients are moistened. Fill muffin cups 3/4 full. Bake for 18 minutes.
