HURRICANE CAKE 
2 eggs
1 cup sugar
1/2 tsp. salt
1 cup undiluted evaporated milk
2 1/3 cups flour
2 tsps. baking powder

Preheat oven to 350°F.

Beat eggs, add sugar, salt, and milk. Sift dry ingredients together and add.

Bake in a greased 9" square pan for about 25 minutes or until a toothpick inserted in center of cake comes out clean.

I keep hearing about Hurricane Irene on the tv so I thought I would try this cake. Couldn't be any quicker and the taste is better than a mix or store bought plus I know what is in it. I added a teaspoon of vanilla but I don't see why you couldn't add a few tablespoons of cocoa. Thanks for the recipe - I will be making this again.
