CHILI LIMA BEANS 
2 c. dried lima beans
1 onion, chopped
2 tbsp. cooking oil
2 tsp. sugar
1 tsp. chili powder
1 1/2 tsp. salt
2 c. tomatoes
1/2 c. grated cheese

Wash beans. Cover with cold water. Let stand overnight. Cover, cook until tender. Drain. Cook onion in hot oil until brown.

Combine beans, onion, sugar, chili powder, salt and tomatoes; mix thoroughly. Pour into well oiled baking dish. Sprinkle with cheese. Bake in moderate oven (350 degrees) for 30 minutes.
