TOMATO - CHEESE BREAD | |
2 1/2 c. flour 1 1/2 tbsp. sugar 2 tsp. baking powder 3/4 tsp. salt 1/4 tsp. baking soda 1/8 tsp. pepper 3/4 c. shredded sharp Cheddar 1 1/2 tsp. chopped basil 1 c. chopped, peeled tomatoes 1 tbsp. tomato paste 2 eggs 6 tbsp. melted butter Sift together first 6 ingredients in large mixing bowl. Stir in Cheddar and basil. Stir together last 4 ingredients. Make well in center of dry ingredients. Stir in tomato mixture until dry ingredients are moist and just combined. Do not over mix. Scrape mixture into greased 9 x 5 x 3 inch loaf pan. Bake in preheated 350 degree oven for 35-40 minutes. After 30 minutes sprinkle with 2 tablespoons Cheddar. Cool in pan or rack. Scrub warm or at room temperature. Try toasted with butter. |
