MINIBLINIS 
2 pkgs. (8 oz. each) cream cheese
1/2 c. sugar
2 egg yolks
2 loaves (1 lb. each) thin sliced white bread (trim crust off)
1 c. butter, melted
Cinnamon and sugar mixed together

Combine cream cheese, sugar and egg yolks. Beat until smooth. Flatten each slice of bread with a rolling pin and spread with cream cheese mixture. Roll up jelly roll fashion. Dip in melted butter to coat. Roll in cinnamon and sugar.

If preparing ahead, place in a single layer on a baking sheet and freeze. When solidly frozen transfer to plastic bags to store.

When ready to serve, preheat oven to 400 degrees. Leave blinis whole or cut each in half. Place on baking sheet. Bake fresh blinis 8-10 minutes, frozen blinis 10-15 minutes until light brown.

Serve hot accompanied by sour cream and jelly on the side (currant jelly is nice).
